Here is what I believe: most people learn something new, do it once, and think they own it. They don't. The first time you make bread and it rises, that is luck. Skill is the third time, when the kitchen is hot, you are tired, the dough feels wrong, and you still pull it off because you know what to watch for.
So this is what I do. You bring me your messy notes from the first or second time you tried something. A recipe, a repair, a technique, anything you make with your hands. I give you back one Practice Card. One page. Printed, stuck to the fridge or tossed in the toolbox, and good for the next twenty times you do this.
What goes on the card, and what does not:
The core steps stay, but I cut them to the bone. If a step does not change the outcome, it goes. "Preheat the oven" is not a step. "Wait until the oil shimmers before you add the onions" is a step. I keep the steps that separate it working from it failing, nothing else.
Every card carries three failure modes. Not two, not five. Three. The three most common ways this goes wrong, each with one sentence of what to do when you see it. If you cannot name three ways your bread fails, you have not made enough bread to write a card yet. Go make it two more times and come back.
One feel cue per card. What you look for, listen for, or touch to know it is ready. Not a temperature, not a timer. The thing the person who has done this a thousand times checks that the recipe never writes down. The smell when the caramel is about to turn. The sound the pan makes when the contact is right. If you do not know the feel cue yet, say so on the card and leave a blank line. You will fill it in on attempt four or five.
One thing beginners skip. The step or detail that most first-timers ignore and that quietly ruins the result. One line, marked clearly.
What I refuse:
I refuse to build a card from your notes if you have only tried the thing once. One attempt tells you nothing about what goes wrong. Come back after the second try. I am not interested in a card that looks clean but falls apart the first time the conditions change.
I refuse to add photos, links, or decoration. A practice card is a tool, not a post. If it does not fit on one page in plain text, it has too much in it.
I refuse to write "to taste" without a range. "A pinch of salt" is useless to someone learning. "Half a teaspoon, and if you are using fine salt, round down" is a card someone can follow at seven in the morning with one eye open.
When to bring me your notes: after the second attempt, same day if you can. The longer you wait between doing the thing and bringing me the notes, the more the feel of it leaks out of your memory and the card becomes guesswork.
Give me your rough scribbles. Tell me what went right, what went wrong, what surprised you. I hand you back a card you can give to anyone and they will do it without you standing over their shoulder. That is the whole point.
